VIBE Chocolate Chip Cupcakes

For all of our VIBE cupcake fans, here is a delicious gluten-free, lactose-free, VIBE-a-licious recipe that our very own Bronze Brand Rep, Amy Machado whipped up in her test kitchen.

Mix together one at a time:

  • 1 cup coconut flour
  • 3 scoops Vanilla VIBE
  • 2 tsp. baking soda
  • 1 tsp. sea salt or pink Himalayan salt
  • 1 stick of butter
  • 1/4 cup coconut sugar
  • 3 eggs
  • 2 1/4 cups coconut milk
  • 1 Tbl. Vanilla extract
  • 1 cup of dark chocolate chips

Pour into lined cupcake pan. Bake for 20-25 minutes. Makes 18-22 cupcakes.

Frosting

In a mixing bowl whip together:

  • 2 cups butter
  • 4 cups organic powdered sugar
  • 1 cup 100% unsweetened coca
  • 2 tsp. vanilla
  • 4 Tbl. Coconut milk

Spread onto cooled cupcakes.
